Buttery Celeriac Sticks
Ingredients:
- a medium sized celeriac
- 2 heads of onion
- 1 head of purple onion
- half a head of red cabbage
- 0.3 kg carrots
- 10 dkg spinach
- garlic, salt and pepper
- sunflower oil
First chop the celeriac into sticks. Melt the butter and pour in the celeriac sticks, sprinkle salt and pepper, and put a lid on. Stir occasionally to avoid burning.
Chop the onions and fry them in oil. Chop carrots and red cabbage into small chunks and put it onto the fried onions, stir well. Once the carrots soften, add in the spinach and the garlic. Stir well until the spinach softens, too. Salt and pepper as you like. It is delicious with any type of grain, this time we ate it with quinoa.
