Swiss Chard and Carrot Stir-Fry wit
Ingredients:
2 Heads of Red Onions
0.5 kg Carrots
0.2 kg Swiss Chard
0.3 kg Basmati Rice
100 g Pumpkin Seeds
2-3 Cloves of Garlic
Salt and Pepper
Cook rice in boiling, salted water with lid on. Shimmer for about 10-20 minutes, depending on it being white or brown. Dice onions, and carrots, cut chard into long strips. Fry onions on a little oil, add carrots, salt and pepper and stir on high heat. As soon as you see carrots soften a little, add chard to the mixture and stir well. Add garlic as you like.
Toast pumpkin seeds (or sunflower, sesame are also a good choice) and sprinkle over the veggies when ready to eat.
