
Pumpkin and Broccoli Curry
Ingredients:
For the Curry:
1 small pumpkin deseeded and diced
1 big head of Broccoli into florets
For the Paneer:
1 l of whole milk
juice of half a lemon
For Basmati rice:
300-400g Rice
Left over whey from paneer
Cook the veggies in a bit of water and the curry sauce with lid on until soft.
For the paneer - bring milk to the boil and then add the lemon juice, stirr occasionaly. Once the milk has separated pour it into a muslin cloth - a sieve and a big bowl underneath catching the whey. Let it drain completely. After that, squeeze the remaining liquid out and string the muslin cloth together forming a ball and put some weight on it so it gets compacted. Cook the Basmati rice in the whey instead of water - it gets very nutritious and delicious that way.
