
Ocra Curry with Toasted Pak Choy
Ingredients:
150-200 g Ocra
1 head of Red Onion
1 pc Hokkaido Pumpkin
2-3 pcs Beetroot
Garam masala, curry, Salt and pepper
2 pcs Pak Choi
1 head of Purple Onion
1 head of Red Onion
3-5 cloves of Garlic
Chop up red onion, and chop beetroots and pumpkin into small cubes. Fry onions and add the veggies and put lid on. Stir occasionally.
In the meantime slice up ocra (cut off on both ends, too). Once the veggies are softish, add ocra and the spices, mix well. Put lid on. Once the bottom gets toasted, add a little bit of water, stir, put lid on. Keep doing this until ocra soften, too and is flavoursome from the spices.
Chop red and violet onions and fry in oil. Chop up pak chois and add to the onions. Stir constantly and once the pak choi are bright green, add the garlic in. Stir well.
Eat it with some tomatoes, rice or millet as you like.
