Courgette-Tagliatelle with Tomato Sauce
Instead of spaghetti we used courgettes as ribbons, thus we could spin them onto our forks the same way we do with spaghetti - that's the uniqueness of this dish. The children loved it, too!
Ingredients:
1 kg courgettes
a few heads of red onions/salad onions
1 jar of passata
a little bit of broccoli florets, aubergines, fresh carrots... whatever you have in your larder
fresh basil
fresh garlic
salt and pepper
cheese
Dice all onions and fry in a bit of oil. Slice up all the courgettes with a potato peeler or cheese grater, chop all vegetables into small pieces. Add the vegetables to the frying onions except for the courgettes. Cook them and add passata, garlic, salt and pepper. Mix them well together. Finally, add the courgette ribbons till they become soft.
Serve with grated cheese.
